clean eats | Peanut Butter Pie!


Super easy to make and just like the real thing! A sweet, fudgy, nutty, smooth peanut butter filling poured over a perfect mock graham cracker crust. This is enough to satisfy even the most discerning ex sugar addict.

Now I only prepped this individually in ramekins to keep my portions under control. If I make a full size pie, I find myself slicing a little wider than I'm supposed to + picking the biggest piece. I know this about myself, so I knock out the ability to cheat. There are directions below for creating this recipe in a full sized pie, which would be awesome for the upcoming winter holidays.

>>> INGREDIENTS <<<

CRUST
Olive oil cooking spray
6 tablespoons oatmeal
2 tablespoons of almond flour
1 packet of Truvia
2 teaspoons of coconut oil, melted
2 teaspoons of unsweetened plain almond milk

FILLING
1/2 {4 ounces} package low fat cream cheese, room temp
1/4 cup real peanut butter - peanuts only!
1 cup part-skim ricotta cheese
6 packets Truvia


>>> DIRECTIONS <<<

Spray four 6 ounce ramekins with a touch of organic olive oil non-stick cooking spray. Preheat your oven to 300 degrees. In food processor, process the oats, flour and 1 packet of Truvia, until finely ground. It only takes a few seconds. You can also use a blender. That works perfect too. Then add the oil and milk. Pulse until mixture forms wet crumbs. 


Divide the oat crust mixture into your ramekins and press into the bottoms. Bake in the oven for 8 minutes. Remove the ramekins from the oven and let them cool to room temp. It only takes about an hour to an hour and a half. The filling is “no bake,” so it’s really important not to melt all the ingredients in hot ramekins. Definitely let them cool completely.


Blend all the other ingredients... 


...and pour/spoon evenly over the crusts. 


Chill for at least 2 hours. Then go to town!

Perfect! All you have to do is double this recipe, and you can easily and perfectly make this in any standard size pie pan. Each slice is sugar free, super clean, loaded with protein… all while tasting so naughty!
