clean eats | Easy Brown Spanish Rice


This is an awesome, whole grain, healthy side dish. Not only is it a perfect pairing for my Spanish Style Swai, it’s also a great side for my Spanish Style Pork Chops… you could sit and eat it for lunch with grilled chicken diced up in it. It is that good. Classic. Perfect.

Ingredients
1 onion, chopped
1 clove garlic, minced
1 cup of brown rice
3 cups chicken stock
1 cup fresh chopped tomato
Pinch of oregano
1 teaspoon salt


Directions
This is so easy. You are literally going to throw all of these ingredients into your rice cooker, give a good stir and set to cook. When the button pops, you’re ready to serve!


If cooking over stove top, bring everything to a simmer, then cover. Reduce heat to a simmer and let it cook for 25-35 minutes, or until all the liquid has been soaked up by the rice.
