{recipe} Citrus Chicken


This is a fabulously bright and refreshing dish that I made up when needing to unload some of the bulk fruit I had on hand. Super simple to make, ingredients are completely interchangeable - try this recipe out right and it's sure to please, or have fun and build on it!

Ingredients
Salt to taste
Pepper to taste
1/4 cup bread crumbs
Juice of 3 key limes
Whole orange, peeled
1 shallot
2 teaspoons minced garlic
1 stalk celery
1/4 cup olive oil
1/2 teaspoon Italian seasoning
2 pounds boneless skinless chicken breast


Directions
Preheat oven to 350 degrees. Spray a large glass baking pan with nonstick cooking spray. Lay out the chicken breasts and lightly salt, pepper and dash with Italian seasonings, and sprinkle with the bread crumbs. In a blender, or food processor, create a fruit "vinaigrette" type sauce by blending the key lime juice, whole orange, shallot, minced garlic, celery stalk and olive oil. Spoon the vinaigrette over the chicken breasts and bake in the oven for 30 minutes. Voila!
